I’m lucky. I’ve always had one favorite pizza flavor: mushrooms & olives. I don’t like meat on my pizza. So when I was craving pizza, on my new eating plan, it was an easy solution.
And it was only 165 calories for TWO pizzas. One pizza is only 82.5 calories. Can you believe that? It’s like the magic super food. And it’s delicious to boot. (Nutrition facts in order from top left: Mozzarella cheese, Portabello mushrooms, GF Ragu pizza sauce, sliced olives)
I measured out one serving of cheese, sauce and olives, and it was enough to cover both mushroom tops. 2 mushrooms is one serving. I baked them on 450 for about 5-10 minutes. I don’t remember exactly. I just watched for the cheese to be melted and the “cooked mushroom” look.
